Lobster Rolls (New England Style) Culinary Archeology Game Day Eats

GATHER:

  • 2 lobster tails, cooked and chopped
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp chopped chives or scallions
  • Salt and pepper to taste
  • 4 New England-style split-top hot dog buns
  • Butter, for toasting

PREPARE:

In a bowl, mix lobster meat with mayo, lemon juice, and chives. Season to taste. Lightly butter buns and toast on a skillet until golden. Fill with chilled lobster salad. Serve with kettle chips or coleslaw.
